Baked Sweet Potato
Sweet potatoes are rich in beta-carotene, some B vitamins and vitamin A. This makes for a good nutritious lunch with a side salad and a drizzle of olive oil or vinaigrette. They’re also excellent in vegetable and lamb curries, especially where an element of sweetness to the curry is welcome, also it’s an ingredient that works well with almonds, sultanas and mild spices.
Ingredients: (per person)
Sweet potato per person.
Drizzle of oil
Salt and pepper
50g grated cheese
2 large tomatoes
1 small onion
Method:
Mix the oil with the salt and pepper together in a bowl.
After washing the sweet potato coat in the oil seasoning.
Place in the microwave for 6 minutes
To make the tomato and onion side salad roughly dice the tomato and finely dice the onion. Mix together with a small pinch of salt and pepper
Remove from the microwave and place the sweet potato into the oven for 20 minutes, or until soft on 150ºC. Once cooked split the potato and add the cheese.
Serve with the tomato and onion side salad.
