Chunky pieces of chicken, approx 5cm square
Fine oatmeal & wholemeal breadcrumbs, mixed
Mix oatmeal and wholemeal breadcrumbs together.
Take each chunk of chicken dip into beaten egg then into the crumbs.
Lightly fry in a pan until golden and then place onto a greased baking sheet and cook in a hot oven 220ºC Gas Mark 7 for approx 20 minutes until all the flesh is opaque white and cooked through. Add spices to crumb mixture for a change. May be served with a tomato sauce.
These may be served hot or cold.
