Ingredients: Makes 30
100g peanut butter
100g soft brown sugar
1 large egg
125g SR wholemeal flour
*tip: Peanut butter cookies originated from the USA in the early 20th century. A delicious flavour and texture with whole peanuts added in for an extra surprise when you bite into them.
Lightly oil 2 baking sheets
Cream or process peanut butter, sugar and butter in the food processor.
Add the egg and the flour to the peanuts and process until you get a dough ball
Make the dough into balls the size of cherry tomatoes. Add a peanut to the inside of each one and then depress each in the middle with your thumb
Bake for 20-25 minutes at 180ºC Gas Mark 4 until golden
Cool on a wire rack
