Wholefood Fruit Cake

Ingredients:
225g wholemeal flour
25g plain white flour
2 teaspoons (10 ml) baking powder
½ teaspoon (2.5 ml) cinnamon
75g butter or other non-hydrogenated fat
100g Dark Barbados sugar
275g dried fruit try currants, sultanas, prunes, figs, cherries, chopped dried apple
2 medium eggs
1 tablespoon (15 ml) black treacle
150 ml milk

Preheat Oven Gas Mark 4, 180 C

Method:
Use a paper liner in a 2lb (900g) loaf tin.
Mix first four ingredients together – flours, baking powder and cinnamon.
Rub fat into this mixture until fully incorporated.
Add and mix in sugar and dried fruit.
Beat eggs and molasses together.
Add the milk.
Add to mixture and stir thoroughly.
Decant into loaf tin liner.
Cook for 1 hour 20 minutes, or until an inserted skewer comes away clean.

Once cooked remove from tin – the paper can be left on until the cake is cut. This takes approximately 3 minutes in our house!
