Lentil and Tomato with Tuna (or sausage)

Ingredients:
1 small onion, diced
Splash of oil
50g red lentils
400ml hot water with a vegetable stock cube added
1 tin plum peeled tomatoes
1 tin tuna

*tip: This is a firm favourite. A cross between a stew and a soup it bursts with flavour, is quick and easy to make and beautifully inexpensive.​

Method:
Add the onion to a heavy based pan on a medium heat and cook in the splash of oil until softened.

Add the lentils and mix thoroughly then add the stock.

Cook for 30 minutes or until lentils are completely soft, then add the tins of tomatoes and tuna.

Stir thoroughly, but gently to avoid completely breaking up the tuna.

Heat until bubbling hot and serve. This is an easy and delicious mealtime solution.

This keeps for 4 days in the fridge.

You can also use this without the tuna but add (cooked, grilled) sausage.
