Tomato Sauce with Basil
This slow cooker fresh tomato sauce is a lovely accompaniment to so many dishes. Zingy tomatoes, peppery basil and the underlying notes of garlic, onion and olive oil makes this sauce a winner. Teamed up with meat dishes or served as a mainstay to a vegetarian dish, such as pasta, the complex flavours will permeate and enhance any dish.
Ingredients: Serves 2
1 tbsp olive oil
2 spring onions
1 medium onion
2 cloves garlic
2 large tomatoes
1 400g can tomatoes
1 tsp dried basil
100ml vegetable stock
Good handful of fresh basil
Method:
Switch the slow cooker to low
Add the oil
Wash and chop the spring onions, peel and chop the onion and crush and chop the garlic
Wash and chop the fresh tomatoes
Add the can of tomatoes, the fresh tomatoes and the dried basil to the slow cooker
Cook on low for 3 hours
Tear the fresh basil leaves
Serve piping hot, garnished with the basil
*tip: This may be used as a sauce for pasta or light meats such as pork or chicken. If you have any leftovers it makes a good tomato base to a pizza.
