Welsh Griddle Cakes

Ingredients:
225g Self raising flour
pinch of salt
100g soft butter or margarine
50g caster sugar
50g dried fruit
1 medium sized egg
2 tablespoons milk
Flour for dusting

Equipment:
Mixing bowl
Chopping board
Knife
Rolling pin
Griddle pan, or heavy based pan

Method:
Cut the fruit into small pieces. This helps to stop the little patties (cakes) from breaking up as they cook

Mix the flour with the salt, then rub in the butter

Stir in sugar and fruit

Beat the egg then add this and enough milk to make a stiff dough with the flour

Roll the dough out on a flour dusted surface and cut out rounds or whatever shape you fancy using a cutter or cup/mug

Reroll the trimmings until all the dough has been used

Cook on a greased griddle for approximately 3 minutes on each side

Serve hot or cold delicious with butter or jam.
